Ingredients
- 1 cup almond flour
- 2 eggs, beaten
- 3 tsp sugar substitute
- 1½ tsp pure vanilla extract
- 1½ tsp baking powder
- ½ cup raspberries
- Cinnamon is good paired with raspberries
Method
- Preheat the oven to 375°F.
- Line a baking sheet with parchment paper.
- In a large bowl, combine the almond flour, eggs, Splenda, vanilla, and baking powder. Mix well.
- Add the raspberries to the bowl and gently fold in.
- (optional) Add a few drops of Special Oil to help burn stubborn fat.
- After the raspberries are incorporated, spoon 2 to 3 tablespoons of the batter, per scone, onto the parchment-lined baking sheet.
- Place the baking sheet into the preheated oven. Bake for 15 minutes, or until lightly browned.
- Remove the baking sheet from the oven. Place the scones on a rack to cool for 10 minutes.
Keto Raspberry Jam (serves 4)
- 4 oz. (1 cup) fresh raspberries
- 1 tbsp chia seeds
- ¼ tsp vanilla extract
- 3 tbsp hot water
- Mix chia seeds and water in a beaker. Let cool a little.
- Add raspberries and vanilla and mix with a hand blender.
- Pour into a glass jar and serve with pancakes, scones, chia pudding or oatmeal.
Tip:
You can use frozen berries, but let them thaw first for best results. Feel free to use other berries for chia jam – strawberries, blueberries, blackberries, red currants, cranberries or fruits like diced mango or kiwi.
Will keep in the fridge for 1 week or it can be frozen

Homemade Cinnamon Butter Recipe that is lightly sweetened. Perfect for pancakes, toast, Scones, homemade bread, pumpkin rolls or homemade biscuits.

- ½ cup salted butter softened
- ½ teaspoon vanilla extract
- 1 teaspoon cinnamon
- 3-4 tablespoons powdered sugar
- Combine all of the ingredients in a small bowl, adding powdered sugar one tablespoon at a time until it the butter is the sweetness you'd like.
- Mix until the butter is smooth and the ingredients are mixed in very well.
- Store the cinnamon butter in an airtight container in the refrigerator.
